So I am sure you can can alfredo sauce. Different foods need different times, some need pressure canning, etc. The (fairly vile) "alfredo" in jars in stores has ingredients that are a fair bit different from what one would use at home, and commercial canning is different from home canning. Gross as I think the commercial alfredo is, I'd use that in a second over home-"canned" alfredo.
